2020 has been a crazy year, to say the least. Between adding masks to our outfits and learning to DIY just about everything off of Pinterest, we also have been cooking A LOT at home. I don't know about you all, but cooking at home gets tiring and sometimes I don't want to eat out; I want a home-cooked meal. So I have the solution for you...
My friends at Frankie + Wally's have created ready-to-bake lasagnas to cure you homemade meal blues (minus the mess) just throw it in the oven and add the toppings they provide as you please and enjoy! And trust me when I say you will savor every bite of their lasagnas that I am pretty sure were made in Heaven! They have options too: veggie and meat. My family and I personally ordered the veggie lasagna and it was a HUGE hit! Even my brother who doesn't like cheese loved it (and had seconds!) You can do pick up or they deliver as well. Besides getting a tasty meal you'll love, you will also be supporting a small business! Especially after 2020, I think it has become even more clear that small businesses are the heart and soul of our Miami communities. Happy National Chocolate Chip Cookie Day! While 2020, hasn't been the sweetest, I promise you these cookies are! I got my fan-favorite chocolate chip cookie recipe from the Double Tree, but changed it up a little bit. These cookies are delicious! Trust me, I consider myself a cookie connoisseur and these are the BEST!

Ash's Favorite Cookies (Inspired by the Double Tree)
Makes about 24 Cookies
2 sticks of butter (softened)
3/4 a cup + 1 tablespoon of granulated sugar
3/4 cup of light brown sugar
1 1/4 teaspoons of vanilla extract
A squeeze of lemon juice
2 1/4 cups of flour
1 cup of rolled oats
1 teaspoon of baking soda
1 teaspoon of salt
Sprinkle of Cinnamon
2 2/3 cups of semi-sweet chocolate chips
2 cups of chopped walnuts
1. Cream together the soften butter, sugar, and brown sugar.
2. Next, mix in the eggs, vanilla, and lemon juice (mix till a fluffy texture--don't over mix!)
3. Add the salt, baking soda, and cinnamon and mix.
4. Then add the flour and oats, again being careful not to over mix.
5. Stir in the chocolate chips and walnuts (NO mixer).
6. Roll into large balls onto a pre-sprayed or lined baking sheet and make sure they are about 2-inches apart.
7. Pre-heat your oven to 300 degrees and bake the cookies for 20 to 25 minutes and then allow to cool after.
Whenever I share Eric on the blog, a lot of DMs come in asking me how we met and date night ideas. So long-story-short, we were casually dating other people and were on a double-date when we met. We were friends at first but once we were both not dating other people, Eric asked me on a date (I may of said no at first) but just a few days later I said yes. So the answer is yes I have always been stubborn and a pain. It has been 2 years since of lots of love, good food, fun travels, and tons of Disney trips. I mean hey, they call it the happiest *and most expensive* place on earth for a reason, right??
Eric and I are very similar personalities so we clicked from the start. We are both very sarcastic, are super annoying (LOL), and love to spend money (especially at Walt Disney World). I have gotten DMs and questions from friends asking the best way to find love or get a solid boyfriend and to be honest I don't have the answer, because there is no guide to how to find love 101. My best advice is to have an open mind, love yourself first, and to not focus on "wanting companionship", instead focus on YOU and the right person will come.
So I thought in honor of our two years together I'd share some of our favorite dates, activities, and adventures with you all.
